16 ounces cream cheese, softened 2 large eggs 3/4 cup sugar 1 teaspoon vanilla 3/4 cup blueberry or other fruit preserves Hot shortbread base (see below) Preheat oven to 350°F. In a bowl whisk cream cheese until smooth and whisk in eggs, sugar and vanilla. Evenly spread preserves over hot shortbread and pour cream-cheese mixture over it. Bake in middle of oven until slightly puffed, about 30 minutes. Cool completely in pan and cut into 24 bars....

1 pound Swiss cheese, coarsely shredded 1 bunch green onions with tops, chopped 1/2 cup chopped mild banana peppers 1/2 cup finely chopped jalapeno peppers mayonnaise 1 head cabbage Combine the cheese, green onions, banana peppers and jalapeno peppers in a bowl. Add enough mayonnaise to bind and mix well. Store in the refrigerator for up to 1 week. Add additional mayonnaise if needed at serving time.
