4 salmon fillets
3/4 cup finely ground bread crumbs
1/2 T chopped fresh dill
1/2 T chopped fresh thyme
3 t. chopped fresh rosemary
2 T olive oil
Salt and pepper to taste
1/4 cup (or less) grated Parmesan cheese

Mix bread crumbs with the fresh herbs, olive oil, salt and pepper. Crust the meat side of the fillets with the crumb and herb mixture. Place fish skin side down on a parchment paper-lined baking sheet. Bake salmon fillets in preheated 400° oven and cook for 8-12 minutes, or until done. Serve with a lemon wedge.

If using dried herbs, only use 1/3 of what the recipe calls for. Dried herbs are much more potent.
